Good Afternoon MediaWiki Fans:
I'm migrating our installations to a new machine with upgraded
everything. I'm wondering of the MySQL character set choices
are important.
My older installation is: MySQL 5.0.22-standard

Is anything in the system going to care that some
latin1 types are now
utf8 ?

No. You can set the collation per table, and MediaWiki can use latin1,
binary or utf8 (it needs to be configured correctly).
You only need to be careful with not corrupting the dump. You may need
to set --default-character-set
See

An error results in this kind of stuff:
[[es:Brcoli]][[pt:Brcolis]]
