New users can go into a group that has read, but not edit permission.
You would then change their group membership to a group that can
edit as
part of the registration process. Adding some code to shoot off an
email upon user creation shouldn't be too difficult.

My big worry is that, like with a forum, that spambots will register
automatically and then totally screw up the wiki with spam. Is
MediaWiki pretty immune to this, given that there's no way to
moderate registrations? I just don't have the bandwidth to monitor
the wiki 24/7. Thanks.

If you do what we suggested, with new accounts read-only and manual burecrat
intervention required to write-authorize new accounts, then you should be
pretty safe...
