I tried that, and I lost my stylesheets. I think that it's because
all of the variables that got set in DefaultSettings.php based on what
IT set $wgScriptPath to (i.e. /wiki)

Well, that configuration won't do what you want. :) Try:

Alias /wiki /var/www/w/index.php
LocalSettings.php:
$wgScriptPath = "/w";
$wgArticlePath = "/wiki/$1";
