Add to [[MediaWiki:Common.css]] i { color: red }
That will make all italic text red colored.
On my installation this statement works when placed in skins/common/shared.css
Too bad the italics used for math mode are the same italics as the italics font; other than that my idea is great for instituting editing mark-ups.

You can exclude math tags :)
