Is there an easy way to edit or create articles with proper HTML formatting?
It doesn't make sense to me that we have put manual <BR> tags to get a break. Is there anything I can install extra that would let me display what I entered the way I entered it? If I put a line break after each line, it should distinguish it as a line break and insert a <BR> when displaying. Same with text formatting..
I am planning to have a team of people contribute articles to our wiki site, but I can't afford to train them that triple (') means bold, etc. I like how Wordpress (for e.g.) works as far as entering articles in concerned. That way there is no training required for non-computer savvy people to enter things in.
Any ideas?

It's extraordinarily useful in some cases to have soft returns merged together. If you really want to force mediawiki to keep your formatting, place your text in <pre></pre> blocks.
If pre looks ugly to you, you may want to change the style which pre displays by editing MediaWiki:Monobook.css and putting in div statements (although my own issues with this functionality continue, so I can't advise on using it).

Have everyone use the handy-dandy row of icons at the top of every edit box. I personally use <b> <i> etc instead of the legacy "ticks" which other people seem to like.
Somewhere out there is a macro for word which will convert basic formatting to mediawiki markup. This in combination with the external editor option may be just what you want.
There are also a couple of WYSIWYG editors (wikiwyg) which might be of use.
