I performed the update as you pointed out. Now, when I visit the site
as an anonymous user, the count is fine. However, if I visit as an
authenticated user, I get the old, erroneous number
(18,446,744,073,709,551,614). I switch browsers (using IE and Mozilla),
clear their caches, and observe the same result...
Does MediaWiki actually pull from 2 different places for authenticated
vs. anonymous user?
This seems counter-intuitive...

Probably the counter wrapped backwards by mistake. You can manually reset the
count like this in MySQL:
update site_stats set ss_good_articles=NNN;
An approximation to the count might be:
select count(*) from page where page_namespace=0 and page_is_redirect and
page_len > 0;
(not exact; it should check the text field for presence of a '[' char)
