What are the minimum specs for running a media Wiki environment?
What kind of hardware/software do you all recommend?

This depends very much on the expected server load. I have run a (1.5.x) mediawiki wiki from a memory stick in my MS-Windows laptop, with a *total* footprint of about 25MB (apache + mysql + php + mediawiki + database and some pages). This can't handle a lot of users however.
I also host two wiki's (on the same machine as it happens) that have as yet not run into any performance problems what soever (dual Xeon, 2GB memory, 140GB+ disk).
The crucial question is with the expected load. If you don't know, start simple but be prepared to move to a bigger box when the load becomes too much.
