I changed the $wgSiteName from Islamintheus to "Islam in the US" and
this does change the Page name in the browser, and "About..." in the
footer.
But is this variable used anywhere else, and is it ok to have spaces
in it?

think. $wgSiteName or something like
that.
$wgSitename is effectively the "master" variable that gets
used in
system
messages wherever the {{SITENAME}} magic word appears (so in the
title for
every page, and the meta namespace, etc.). Titles with spaces work
fine,
but there can be some issues with the meta namespace (see <
http://www.mediawiki.org/wiki/Manual:%24wgMetaNamespace>)t;); you
could add
underscores for that, or even shorten it or do whatever works for
you. (You
can do the same thing anywhere else, too, if it strikes your fancy.)
