What I want to do is be able to transclude individual sections of pages... without having to go back and edit old pages to add <onlyinclude> tags.
I did find the Labeled Section Transclusion extension ( http://www.mediawiki.org/wiki/Labeled_Section_Transclusion) but that also involved edit old pages.
Are there any other options?

DynamicPageList can pull individual sections of pages with its "includepage" option.

That extension can transclude sections without editing the page, by using the normal wiki headeings, i.e.
{{#section-h:page|section}} or {{#section-h:head|begin|end}}

That extension will work; you can use the #section-h parser function to transclude wiki section headers, i.e. {{#section-h:mypage|section}} or {{#section-h|mypage|from|to}}
