Well, there's documentation plastered all over Meta (http://meta.wikimedia.org) and the "official" web site at http://www.mediawiki.org. Several of the Wikipedia tutorials (http://www.wikipedia.org/wiki/Help:Contents) are geared towards editing and concepts useful for editors to understand.

For more specific help, considering emailing the mailing list (as you've done) or search the mailing list archives (http://mail.wikipedia.org/pipermail/mediawiki-l).
