Well, only categories have the magic property of being generated from a "what links here" list; other pages have to be changed to add content to them. So there's nothing you can do to an image which will make it appear on anything other than a category. Instead, you'll just have to add an image gallery to your userpage (or wherever) and update it yourself - you might want to use the special <gallery> tags: http://en.wikipedia.org/wiki/Wikipedia:Gallery

It seems to me that everything you want is included in the category system - you just need a convention on your wiki for categories called [[Category:Images uploaded by Myname]] or whatever; they'll show up as galleries of thumbnails as appropriate. You can even make it easier with a template, so that it's {{user-image|myname}} or something.
The only thing you can't do with that is include it directly *on* the user-page, rather than as a separate page, but you already said "or a sub-page", so I'm guessing that's not a hard constraint...
