HI,
I've browse through the Mediawiki help, without luck. I'm orking with Mediawiki 1.8.2
Is it possible to have some kind of parent/child relation with categories?
For example, I would like to categorize pages by US states, but I would also like to have a parent categorie USA. So that if I have a page Seattle categorized as Washington, it would show up on both categories: Washington and USA.
Is there a way to do something like this?
You can put the page Washington in Category:Washington (put [[Category:Washington]] in its text), and then put Category:Washington in Category:USA. You could put Washington in Category:USA in addition to this, depending on how you want to organize things. You can make categories into subcategories the same you would would add any page to a category.

Of course! Gosh, I need new neurons, thanks.
Another close one: is it possible to browse/sort/display pages based on two (or several) categories?
For example if I have two distinct categories A & B, could I list the pages that belong to (at least) both A and B categories?

Yes it is, using the DPL2 extension.
See http://wikiindex.com/DPL_Test_Page for an example.
The extension is at http://meta.wikimedia.org/wiki/DynamicPageList2
