Good question Paul. I wonder how is it done in Wikipedia. Is it one wiki or several? Which one is more suitable for my needs?
What I am tasked to do should hold matching, but may not be identical, content in different languages - like what Wikipedia appears to me.

Are you trying to have a single wiki holding multi-lingual or have multiple wikis (English, Spanish, German etc) that hold the same information but in different languages?
Each is possible but fundamentally quite different.

Each "lang".wikipedia.org has its own separate mediawiki installation and they are all connected using some sort of interwiki links (which IMO is the most elegant solution but needs to be configured -- don't know how yet, I'm sure it's on mailing-list and google)
on the contrary, www.mediawiki.org is only one mediawiki installation but you can access different languages using sub-pages (http://www.mediawiki.org/wiki/MediaWiki, http://www.mediawiki.org/wiki/MediaWiki/fr,...) (which is the easiest solution, no configuration changes are needed)
