Are you using ! at the begining or | ? ! creates a table header instead which is bold by default in most browsers.

There are two different "cell" delimiters in wiki tables: ! and |

The ! delimiter marks headers (bold, centered), while the | delimits regular cells.

Make sure you're using | when you mean a regular cell and only using ! for headers.
