Is there a way to have this enabled as a default when someone verifies their email?
Also, any way to enable it as a default and hide it so it can't be changed?
In version 1.13.0 a new hook was introduced called 'UserSetEmailAuthenticationTimestamp'[1]. An extension hooking this could set that preference automaticlally. It may not be too difficult to core-hack this hook into your MW install until you're able to upgrade.
With respect to hiding the option, I'm not sure if that can be done with an extension. It doesn't appear that there's an easy CSS method either (there doesn't appear to be an identifiable wrapper element around the checkbox and label). It's probably easy to core-hack it though by cutting out that line from SpecialPreferences.php.
