You have two ways to choose from:
1. Host all the pages on one wiki, like on
mediawiki.org. It is the
simpliest way, but it has obvious disadvantages: you can’t choose a
default interface language, etc. However, this will enable you to
manage a wiki as a whole. This can be done with templates only, you
don’t have to install or reconfigure anything.
2. Create two wiki installations, like
en.wikipedia.org and
it.wikipedia.org. They may share portions of configuration files to
make some operations easier. However, each user will have to register
twice, and you can’t move pages from one wiki to another as easy as in
one wiki (you’ll have to export and import pages). More on this about
