Since we have no (current or foreseeable) intention of trading under this name, the trademarkability of any name is surely a moot point. Even if not protected by trademark, should someone start trading under that name, in a way that is detrimental to us, we should still be protected by the common law concept of "passing off" (NB IANAL)
Therefore I would be in favour of "Wiki UK"

Well wUKi sounds rather like wookie, which is almost certainly already trademarked...
Trademarks only apply to a specific context, so I doubt that's an issue.
