The actual talks start about 6pm.
Speaking for myself only, I generally work to 6 or 630 most nights. 730 is a good time to meet
That still lets some people eat dinner before the meeting, or eat at the meeting or whatever.
Also meeting right after work, to me, feels like more work, not enjoyment. A little breather refreshes people. Just my own observation

Agreed. A little more of a break would bring in a wider crowd.
+1 to a later start time. It's always bothered me that our meetings start so early. Usually events I go to weekday evenings start at 7pm and talks begin at 7.30/8
