If I'm conducting several edits on a page, I usually
type something like "Still editing, please wait..." in
the edit comment box. Usually that keeps people
watching Recent Changes from jumping in too soon.

First, I don't like the practice of repeating the
title that way. Although
that could be standard, would hardly matter.
It has been accepted as standard practice for
Wikipedia. I'm not a huge fan
of it myself, but it is useful. Makes the google
search text look good :)
Second, very seldom do I get anything right the
first time and before I'm
done someone is jumping in. Might be nice to let
the ink cool, before
jumping in on new articles.
Fred, I understand your frustration. Part of that's
unavoidable when working
with a wiki. In fact, it's much of the benefit.
However, if you're working
on a complicated article and would like people to
stay away for a little
bit, ask people to do so in the Talk for that
article. It's always the best
move to trust that everyone else will be respectful
of your desires if you
express them.
