you've problably seen the "Reta Vortaro", it's a big Esperanto dictionary, providing information about Esperanto-words but also translations of them into many languages:

It's downloadable in XML-format and - it is free under GFDL! http://www.uni-leipzig.de/esperanto/voko/tgz/index.html
I think it would be great using this as a basic database of the new Esperanto-Wiktionary (http://eo.wiktionary.org), but because of the XML-format it should be easy to create word indexes of other languages.
There is just somebody needed who knows how to convert the XML-structure into Wiki-Code and how to import this into the existing Wiktionaries.

I any case, this would have to be done individually for each Wiktionary, as they use different templates (and some use no template at all).
I believe the best thing to do is to create some page colleting info about free dictionary resources and leave any decisions and actions to respecitive Wiktionary communities.
