The "Ido" Wiktionary has nearly 11,000 articles with 11 contributors and no administrators. Ido is a constructed language that was an early break off from Esperanto. Most of the articles are indeed stubs showing only a word from some language and its translation into Ido. :-)
The Latin Wiktionary has just reached 2,000 articles. @whee.
