The reason why Wiktionary and Wikipedia have a wiki per language is because there are different teams with knowledge of those particular languages working on them. If you create a wiki for one specific purpose you better start off with only one wiki. It's always possible to set up multiple ones later if the need arises.

Thanks for the help Polyglot. I suppose the reason I was thinking the multiple install would be a good idea was that it would separate the languages and make it simpler for some other functionality I would like to add such as dumping the content of one language to an sql file or pdf document. I don't know if the advantages for implementing this type of functionality would outweigh disadvantages.
