See [[:en:Wikipedia:Ignore All Rules]] is one. Now, I'd like you to read the talk page and the history of that page. A lot of people HATED it passionately and did their best to kill it or at least neuter it. But Jimbo has stated it's obviously policy, because product beats process.

See [[m:Instruction creep]]. And its history ... in which you can see how it was instruction-crept.
See [[m:Don't be a dick]] and the attempts to kill that, most notably by claiming it must be deleted because the translation would be unacceptably rude in Japanese.
These seem like some of the most important policies ... or am I just showing my age? As for the last one, the Japanese will just have to read it in English. ;-)
