After reading the guide to Windows 8 and watching the video at http://www.cbsnews.com/8301-205_162-57541463/where-do-i-click-again-a-guide-..., I’m wondering if we’re doing anything to optimize the MediaWiki interface for touchscreens. Is there any work underway in this area? I hope that, if so, intuitiveness is a high priority.

That's exactly what the mobile team is working on. There is a good deal of content about mobile MediaWiki at https://meta.wikimedia.org/wiki/Mobile_projects, and on MediaWiki.org.
If you opt in to the mobile website's beta, there's a lot of interesting stuff to see, with the obvious caveat that not all of it will become permanent or is in perfect working order yet.
