Status "unmaintained" is currently signalled with gray color, the same

This makes sense to me. Go for it.
We as users cannot change the colors, because these are defined as
classes ext-status-<extensionstatus>.
and are _not_ defined in
https://www.mediawiki.org/wiki/Template:Extension .
Exampleof use: see page source of
https://www.mediawiki.org/wiki/Extension_status :
class="tpl-infobox ext-infobox ext-status-experimental"
We could probably go away from this class-based color definition, and
define it directly in the the template
but only when these classes are not used elsewhere in MediaWiki.
Can someone perform a global wikitext source search on mediawiki on
which pages the string "ext-status-" is used ?
00 BF FF (DeepBlueSky) may be a suitable background colour for
"unmaintained", see
https://en.wikipedia.org/wiki/Web_colors#X11_color_names .
