This makes sense to me. Go for it.
We as users cannot change the colors, because these are defined as classes ext-status-<extensionstatus>. and are _not_ defined in https://www.mediawiki.org/wiki/Template:Extension .

We could probably go away from this class-based color definition, and define it directly in the the template but only when these classes are not used elsewhere in MediaWiki.
Can someone perform a global wikitext source search on mediawiki on which pages the string "ext-status-" is used ? 00 BF FF (DeepBlueSky) may be a suitable background colour for "unmaintained", see https://en.wikipedia.org/wiki/Web_colors#X11_color_names .
