I'm generally leery of drop-down boxes as they don't show the available
options until you've gone to the trouble of asking what's available. And
if the available options are different for each page, that's going to
spell trouble. People will check a few times, then stop looking once
they've found that their language never comes up.
Wiki is about serendipidous discovery; part of that is seeing that a link
to Chinese or Polish or Esperanto or Volapuk or Latin or French is
available without having thought to seek it out.
However, it's a direction worth looking into.
