The Mediawiki development version already log moves in Special:Log , still have to implement a one click revert though.
Note: you can move a page over an existing redirect poiting to it without deleting the redirect given there is no history:
[[Foo]] contains : #REDIRECT [[bar]] Move [[bar]] as [[Foo]].
