Just dump your database in a file.sql
Install the Linuxbox with everything you need. (LAMP)
Load the dump in a new Database.
Install mediawiki just like normal.

No, you just can't copy mysql-files from win to linux. You need to dump
the db.
images/document, and their relative paths?
Just take the images directory and copy it to the new machine in the
images directory there.
