Are there any signigicant server load issues relating to extensive use of templates or use of templates within templates on a mediawiki installation? What (if anything) relating to use of templates would be bad for server load?

You just need to look at the restrictions in place. No more than 5 inclusions of the same template work on one page on the MediaWiki projects (I think). Further inclusions turn into a link to that template. This is not affected by the template size.
This caused problems at the English Lucid Dreaming wikibook because {{toplink}} was inserted every page or so before a new section. The template is very small, but it didn't include it anyway. :(
On your own server, you will probably be able to afford the load of more template inclusions.

FYI, the 5-transclusions per template limit was lifted as of MW 1.4. See [[m:Help:Template]].
