Can MediaWiki use a - instead of | in the default signature? The bar breaks templates (like http://en.wikipedia.org/wiki/Template:mirror) when people sign inside.

Users can set their signatures for pretty much whatever they want them to be, so a fix would need to encompas any characters parsed. OTOH, why whould anyone need to be including a signtaure as a parameter to a template?

Or the template I linked... (http://en.wikipedia.org/wiki/Template:Mirror). As for "a fix would need to encompas any characters parsed." I didn't say we should block all troublesome characters.
However, it seems the default doesn't actually include a "|". Is this new? Why do so many people (including me before) have signatures containing one?
That said, it would be useful to modify signatures so they didn't use | (except for links).

Uh, what | in the default signature? The only one I see is inside a link, which won't affect the template.

Yes. That was my mistake. It's not the default (at least not anymore?). However, it's a common sig people use for whatever reason:
[[User:Me]] | [[User talk:Me|Talk]]
