Hoi, There are dumps, but the trick is not in having a dump, the trick is in getting the data out. There have been people who have worked on exactly this and they are still working. Thanks, Gerard

[1] has all the database dumps from the English Wiktionary, other language Wiktionary's can be found at [2] (look for any listed ending with "wiktionary" - the code before that corresponds to the language). Most of the dumps are back up now, and are fairly recent (the English Wiktionary one is for 3rd January). When you do download the dump you probably want to get the one in bold and big writing listed on that page as it contains all the pages that have actual content or support the content (e.g. templates), however if you really want you can get everything from the top one.
