Hi Matt, I've done some extensive work with skinning MediaWiki over the last couple months. Things like displaying different styles on depending on what actual wiki page was showing (and making db calls in some places to figure that out...).
That said, I found I got the biggest bang for my buck (by far) simply changing the stylesheets. If you look at the page source for MediaWiki, you'll find that pretty much everything has a CSS class associated with it, which makes hiding/showing/moving things on the page very easy. I'm continually impressed with this aspect (as well as others, of course) of the software.

not to find more on the web on it since it is no easy task for those not already tempered with the daunting task.

did you see the CSS Zen Garden yet? They do everything with CSS only, no changes in HTML allowed and the results are beyond my skills.
