I'm not quite sure if it's what you're looking for, but the only number I recall hearing fairly recently was Brianna's stat of 10641 new user accounts created in one 24 hour period this year for EN, and that this was a fairly standard number. There's also http://en.wikipedia.org/wiki/Special:Statistics , which shows 5,197,869 accounts, presumably since http://en.wikipedia.org/wiki/Wikipedia_day
Others may have number of views per unit time, or other stats, including number of anon editors (which aren't in the above).
