If I want to see them, what should I do?
Special:Undelete doesn't use a "pager" like in the page history, where you can browse the revisions. Instead, all revisions are displayed – and naturally, on pages which have too many deleted revisions, that request fails.
You could probably use the API: http://www.mediawiki.org/wiki/API:Query_-_Lists#deletedrevs_.2F_dr
