Would it be easier to edit if it was _all_ in Hebrew, with no Latin letters at all? As far as I know, this should be possible: all the MediaWiki keywords can be localized, and template names and parameters can of course be changed on each wiki. The only major problem I see are HTML tags -- I don't think MediaWiki has any way to localize those.
