If you have an access to ToolsForge, you could also get this statistics with a single SQL query: https://quarry.wmflabs.org/query/44764 (replace the "fr" in "frwikisource_p" with the code of the language you are interested in). The query is quite slow because fr.wikisource is large, it should be much faster for smaller wikis.

Extension:Proofread_Page uses categories to sort pages by quality, so it would be easiest to use that system. The category names are defined in Mediawiki:Proofreadpage_quality0_category through MediaWiki:Proofreadpage_quality4_category, and you can query those categories using the Categoryinfo or Categorymembers APIs.
