{project name}:terms and conditions would be a policy page that has a summary of only the most important policies of that project.

That's pretty good, here is an alternate that focuses on the defamation concerns boought up by Tomos (I think that every Wikimedia project should specifically bring up the defamation thing as that potentially has more problems for wiki projects than the copyright issues):
"All contributions submitted here are released under the GFU Free Documentation License]], see {Project name}:Copyrights and Warranty Disclaimers . By clicking save you affirm the copyright owner(s) of all submitted material agrees to these terms; you further affirm that such text is not defamatory or in violation of any law; you also agree to indemnify {project name}, all other volunteers and Wikimedia Foundation for any and all claims connected with your submission and are bound by the {project name): terms and conditions."
The Warranty Disclaimers are those allowed under the GFDL. See discussion here: http://www.wikipedia.org/wiki/Wikipedia_talk:Votes_for_deletion/copyvio. These should also be project specific (and are obviously related to the affirmation that are make by submitting contributors).
I would put a link to in to a specific indemnification page on each project so that differences in national law regarding these indemnification issues can be better addressed (likewise with the terms and conditions as you suggest Mav).
