Hi Itzik. Unfortunately in Mexico it's not common or easy have SIM cards with data plans as other countries. It's necessary go direct to the mobile operators and buy there.
We can give you a list of offices where you can go and buy with a cost of 3 USD. Or will be better have activated previously a traveller plan from your own company.

But, Ivan, is it so difficult to get a sim card of a standard provider, like Telcel or Movistar?
Telcel offers prepaid plans of 1 GB for around 160 Pesos (~10 €) for 30 days and you don't even need to show an ID. Is something wrong with that?
European providers charge fortunes for mobile internet in countries outside of Europe.

From my own research, I understood that there are several data plans in
Mexico: http://prepaid-data-sim-card.wikia.com/wiki/Mexico
Movistar for example can be purchased at the airport (but the store in open until 8PM, and I landing after :).
It seem like it can be also purchased from their website, but I didn't tried yet if they accept international credit cards: http://www.movistar.com.mx/tienda/Open-Catalog/Prepago/Movistar-SIM/Movistar...

If you want buy online, you need a RFC document and some Mexican information (such as State, Department, etc.).
I think in the Iván proposal (in Telcel) as the best way to buy a SIM card.
