It should be easy, yes. Wikibooks badly needs an 'export this book' feature.
Being able to export based on category would solve the Wikibooks issue and the
one you speak of. Of course, saying that is much easier than doing it. :)

"Export by category" would go a long way, and shouldn't present too
many technical issues (it would have to be off-line or a low-priority
query). Where things get a bit messy is handling transclusions
(templates, etc.). I suppose any page transcluded into one page in the
category specified would be exported as well.
A very similar issue has also be brought up: transporting all or part
of the help: namespace from one mediawiki installation to another.
Seems like many of the same issues will come up.
Some other related questions come to mind:
* What about somehow tagging specific versions of files to be
exported. The print version would probably need this functionality,
but perhaps we should look at a more general implementation.
*If we think about an "export category" capability, what about "export
all but category(ies)" capability? Seems like a natural step.
* Will we end up with the same claims of censorship as soon as someone
starts designing categories to facilitate a particular distributor's
needs?
