The [[IBM History Flow tool]] does a good job in visualizing all the edits. It doesn't tell you directly who did a specific edit, but the text is colour coded and each contributor has their own colour, so with a bit of matching it's not too hard to find whodunit, unless of course you're colour blind.
In 2005 there was a competition for creating such a tool, and a number of them came up, but none are working anymore.
