I would know how I can help you (and Emmanuel) to develop the software (openZIM + GUI reader application like Kiwix), and how long it will take.
Essential would be for me to know what you want in term of software and selection.
About Kiwix, I assume you have tested it with the demo ZIM file in Italian, so you shhould know what is currently possible: * more or less pertinent selection of articles * Rendering like online with thumbnails * simple gui software (all in one) with search engine
Main problem: * No Windows/Mac support (libzim+Kiwix have to be ported)
If you want to know more, I propose to you to join #kiwix on freenode.
Regards Emmanuel

Sorry, I was not aware of the last month developments. I've reported some bugs (I wasn't able to verify a lot of things because of the little number of articles included): https://sourceforge.net/tracker/?func=browse&group_id=175508&atid=87....

Apart from Windows and Mac support (obvious) and italian language (not difficult), some things are needed: http://www.kiwix.org/index.php/Talk:Features (I didn't know where to post them). Let me know how we can help you.
Thanks,
Federico
P.s.: Sorry for the delay. In the meantime, I've sent Manuel the DVD.

Thank you for your feedbacks.
I have started to patch a few issues and a few others will be patched in the next days.

The Windows and Mac supports are certainly the most obvious but not the most easy things to do. This will take time. I can not give you a date yet, the OpenZIM team will discuss about that at the LinuxTag, end of June.
I have answered you here: http://www.kiwix.org/index.php/Talk:Features and put all your requests on sourceforge. I propose you to track them here: https://sourceforge.net/tracker/?group_id=175508&atid=873518
I would be happy to have a GUI in Italian, please take a look to: https://sourceforge.net/tracker/?func=detail&aid=2799146&group_id=17... ... you can maybe help me :)
I'm working to prepare another dev. ZIM file in Italian, with this time ~30.000, this should take almost a week.
