someone double-clicks on a "Wikipedia for schools" shortcut or .bat or

I fully understand your use case. This is not possible currently.
This has to be done... again please open a feature request if this is
important for you.
I have implemented that feature a few hours ago. I have tested on
GNU/Linux and Windows and it seems to work. Simply call kiwix.exe,
kiwix.sh or directly xulrunner with as argument a ZIM file path.
Available in next release (so a few weeks).
