I see on the collection management page that there is the option to download as text or PDF

Where can I find the option to download as OpenDocument Format or LaTeX?

ODF/ODT was removed as part of the "OCG" project, see https://lists.wikimedia.org/pipermail/wikitech-ambassadors/2014-September/00...
You can still export the wikitext of the page and print it to ODF on a wiki which uses the PediaPress plugin (mwlib). According to WikiApiary there are about 700, perhaps one of these: http://ur1.ca/ol32i
It might be easier to just import the PDF into LibreOffice though...

Ok. Thanks for the info. I have to think more about viable options.
I've looked at the results of the PDF import and they are so munged that it looks like a lot less work to start with the plain text export and go through applying styles.
I'd like to add export of ODF to the wishlist, if there is one. I don't need it often but it does save a lot of time when I do need it.
