Well, anyone who is active enough to discuss the wiki on the mailing list can't be a bad candidate. What you need to do before you start importing is establish some naming conventions, i.e. what namespaces are for what content (I suggest you look at the english wikiversity for an example, but don't rely on it too much as we're attempting to overhaul the system soon). That way you know what goes where before you start importing (alternatively, import it all and move it later).
If you need help importing, I can give you a guide to the basics (I do a lot of importing for the english wikiversity) of it, but I'm sure you'll be able to manage it on your own.
Also, the sooner you can translate the system messages the better, although it seems you have that under control already (see [[Especial:Allmessages]]).
