It would be great to get some feedback about going with a design that shows the search field open at all times.
It is still true that we will pursue a way to hide any toolbars until they are requested by the user.

The first alternative would be significantly modified in the iPhone browser because there is already a toolbar at the bottom.

How difficult would it be to get prototypes out to people on usertesting.com and actually have opinions other than ours?

Well, it would mean building these at least to a basic level.
That would be some or most of the effort toward doing an A/B test, which would give us quantitative data.
One possible path forward is to stick with the open search field for now if testing the alternatives requires several weeks of work (which is likely).
Hence, getting some feedback for now both internally and from the mobile-l list would give us some input into deciding the next steps.
