I need some pieces of advise about where to go for documentation about Wikibooks APIs. If anybody could point me to some links to start with I'll be very grateful. What I would like to do if to access wikibooks lists / categories / access a particular book.

Hi! Why are you asking in the mobile list? Anyway, Wikibooks doesn't rely on any particular extension much, hence you're looking for the standard MediaWiki core API modules such as https://www.mediawiki.org/wiki/API:Categorymembers .

The api surface is huge, but there is material, have a look at https://www.mediawiki.org/wiki/API:Web_APIs_hub for example for some introduction information.
The api sandbox is also very useful for exploring the api and trying to get what you want: https://en.wikibooks.org/wiki/Special:ApiSandbox

If you are interested in HTML content and metadata, then the REST API at https://en.wikibooks.org/api/rest_v1/?doc might also be of interest to you. The HTML content provided uses the highly structured Parsoid HTML format [1], which is optimized for editing and further processing.
