parsoid/api is just the name of a directory in the parsoid source tree.
"Checkout" refers to getting the Parsoid code from Gerrit, which is MediaWiki's source repository. Very simply, you need to run this command on your server: git clone https://gerrit.wikimedia.org/r/p/mediawiki/services/parsoid
This will create a parsoid directory and download the source there.
You need to have git installed before that.

Versions with "wmf" in their number are very tailored and configured for installation on Wikipedia and other Wikimedia Foundation sites. Nothing there is a secret, but you probably don't need it to run VisualEditor on your wiki.
For a private site you should probably get a stable release of MediaWiki, such as 1.22 or 1.21.3. That said, the VisualEditor is a very experimental and quickly developing piece of software so it's imaginable that it will need the very latest MediaWiki version straight from the Gerrit master branch. Try it to find out :)

Webhosting in general: No.

This is the case on webhosting-offers.
You will definitely need node.js to run Parsoid, and it must be node.js 0.8 or 0.10.
Definitely not choose webhosting. Use at least VPS. If you expect hundreds of requests per second, it is recommended to use a different machine for the database. Depending on the amount of services, it is probably better to use a dedicated machine and host your VMs and containers yourself.
