It is possible to change the footer text within Mailman. What should I
change it to? Just make the last line say "To subscribe visit
http..."? Because mine shows links, but I think it's just Gmail
automatically linking the text.

As for subject filtering, it is possible. In fact, I'm sure it used to
forward emails that look like unsubscribe requests to the list admins.
I don't know why it stopped.
