That would be practical if keyboards had a "curly apostrophe" key. How do you propose that editors type it?
All of the wikis I've used for the past couple of years have some sort of character insert menu. Look in MediaWiki:Edittools For an advanced implementation look at the English Wiktionary.
Maybe not compatible with touch-typing but 100% compatible with wikitext , italics, and wiki linking.
